“Good News” re food from Mark Bittman; may breed complacency

Earlier this week, Mark Bittman wrote a column in the New York Times entitled “Food: Six Things to Feel Good About.” In the article he cited the Child Nutrition Act and things that Michelle Obama and Walmart were doing to promote healthier food…plus a few comments about the growth of organic farming. One reader commented, “I like it better Mark, when your complaining, because there’s certainly plenty to complain about.” Here is what I posted, you can see it the NY Times as comment #50; you can click on the link at the end of this post to read the entire article.

TOO LITTLE – TOO LATE.

Thanks for this “good news” article Mark. Unfortunately, it’s a sad case of too little too late, almost like reporting how nice the evening meal was on the Titanic just before she struck an iceberg. Your well-meaning article gives people false hope that all is well when in fact we’re the sickest nation on earth, our cost of health care is out of control, obesity is everywhere and the average American still thinks that they actually “need” to eat animal protein….because that’s what the USDA and our schools of nutrition are still telling them.

Meanwhile, the U.S. government (CDC) is projecting that one out of three adults will have diabetes by 2050. As for Michelle Obama, she is no doubt doing some good things, but she could be doing so much more to help promote truly healthy foods that will reverse heart disease and type 2 diabetes and prevent cancer. Quoting from one of my recent blogs about Michelle

What if Michelle, like Bill Clinton did recently, read Dr. Campbell’s The China Study and learned the not-so-well-known dirty little secrets about the food that we eat and the mainstream, industry-controlled academia that is bent on maintaining the status quo? What if she learned that our toxic diet of meat & dairy at every meal is driving up to 80% of our health care costs? What if she learned from that book that hot dogs, chicken nuggets and even cow’s milk were essentially poisons* that should never be consumed in any quantity by any human — at any age?

*I know…the word poison sounds extreme, yet the Webster definition is “a substance that can cause injury or death to a living organism.” And there is a mountain of scientific evidence suggesting that our toxic western diet most certainly causes “injury or death” to millions of humans every single year.

What if Michelle really learned the complete truth about nutrition and started talking openly about it in public? It still might not be “all or nothing” but I bet she wouldn’t be serving a whole table full of poisons* to her guests at the next Super Bowl party.

Then, what if Michelle started eating at what we call the “4-Leaf” level herself (over 80% of her daily calories from whole plants)? By the way, the average American gets far less than 10% of their calories from whole plants. As for her French fries, a raw potato is one percent fat; a French fried potato derives almost 50% of its calories from the oil in which it is cooked.

Michelle is already an attractive woman; imagine what she would look like as a perfect size 8…after losing 30 or 40 pounds. And imagine the influence that she would have on the entire world when she explained her effortless weight-loss — saying how it was attributed to her new diet-style consisting primarily of whole plants — in nature’s package.

Then, after she had everyone’s attention, she might even quote Dr. Campbell and Esselstyn and say, “If everyone ate like Bill Clinton and myself, up to 80% of the health care costs in our nation would simply disappear.” What if she stopped talking about deprivation and started talking about celebration? What if she stopped talking about balance and started talking about saving lives?

Just imagine!

John McDougall, M.D. — a “trail-blazing” physician

Along with a few other brave pioneers, Dr. John McDougall is featured prominently in our upcoming book about food and the incredible impact that it has on our planet, beginning with our own health. But, it turns out that John has been blazing this trail longer than most of the other doctors. And, although he had been “working his dietary magic” with patients since the 70’s, I first learned about him in January of 2005 when I read The China Study.

John McDougall graduated from medical school at Michigan State and interned in Honolulu in 1972. From there, he became a “plantation doctor” on the big island of Hawaii, and it was during the next three years that he first learned about the power of whole plant foods to prevent and reverse chronic disease. It was on that plantation that he had the opportunity to provide health care for patients of different ages and ethnic backgrounds.

The healthiest of his patients were the older, first-generation Asians who were still eating the traditional plant-based diets of their homeland. While this group enjoyed vibrant health and suffered little or no chronic disease; the picture was not so rosy for their children and grand-children — who had adopted the toxic western diet. Since those days over 35 years ago, John McDougall has expanded greatly on his understanding of how humans can enjoy vibrant health for their entire life — simply by eating the “starch-based” natural diet for their species.

Armed with newfound truth, he has made a career out of helping thousands of patients reverse their chronic disease and regain vibrant health for the rest of their lives. He currently operates a wellness center in Santa Rosa, CA, where he helps thousands of people each year learn about the natural power of plant-based nutrition.

I attended one of his Advanced Study Weekends in Santa Rosa in 2007, which is when I first met John and his wife Mary. His books have many delicious, health-promoting, recipes and I recommend them highly.

Coincidentally, I wrapped up my stay in Honolulu as a Coast Guard officer in 1971, just months before John arrived there in 1972. Like John, I studied at the University of Hawaii, where I completed my MBA just before leaving paradise.

But before I left, I cheered along the amazing 70-71 U of H men’s basketball team that made it to the N.I.T. One of the other fans at many of those games was the 10-year old Barack Obama, who like me, can probably still name the entire starting five players on that magnificent team.

“4Leaf” eating, Part 3 — Limiting the fat and sodium

Almost all processed foods are loaded with fat, sugar and salt. You want to learn how to stay within healthy levels of each.

Everyone seems to like the simplicity and flexibility of the 4Leaf way of eating. All you need to to is eat lots of 4Leaf meals that derive over 80% of their calories from whole plants — and your body will get enough fiber, protein, macronutrients, anti-oxidants, phytonutrients, etc. But, in addition to that simple goal of 80% from whole plants, there are two other things to think about.

Fat and sodium. A natural plant-based diet will always provide you with plenty of these two items. For most Americans, they’re getting way too much of both. Here are some simple guidelines to help you make sure you don’t get too much:

Fat. In the 4Leaf Program, we recommend that you try to keep your daily fat percentage of calories below 20%. Mine averages about 12% and Dr. Esselstyn likes to see his heart patients get down to no more than 10%. Most Americans are deriving a whopping 40% of their calories from fat. What to do?

  • Eliminate all OIL from your diet. All oil is 100% fat and simply not necessary in your diet. No, olive oil is not a health food…and it is not a whole plant. As Ann Esselstyn says, “you can cook in almost any liquid, including beer and wine.”
  • Understand that whole plants like avocado, nuts, seeds, and olives are 70 to 80% fat. While these are health-promoting whole plant foods, if you’re trying to lose weight, you don’t want to snack all day on a bag of nuts.
  • When buying packaged foods, look at the “Calories from Fat” number and divide that by the “Total Calories” number to quickly learn the % of the calories from fat. Then simply don’t buy any products with over 25% fat. That way, with all those fresh fruits and vegetables in your diet every day, you will average far less than 20% of your calories from fat.

Brown, blue, green, yellow, orange and red. Whole plants. Lots of color. How simple is that?

Sodium. When you eliminate most processed foods and eat at the 4Leaf level for awhile, you will begin to taste the wonderful flavors in those plants. For example, I can taste the sodium in the raw tomato. Most people get way too much sodium from added salts, canned goods and other highly processed foods. Here are our guidelines for sodium.

  • Throw your table salt in the garbage and don’t ever buy it again. While you’re at it, do the same for any added sugar that is still in your house… and yes, that means brown sugar too. Added sugar is not a whole plant and you will get way too much of it from your occasional treat.
  • For any packaged goods, look at the milligrams of sodium on the Nutrition Facts label. You want this number to be less than the total calories in that product. This simple guideline will help you control the added salt that is ubiquitous in refined foods.
  • Your body needs about 1000 to 1500 milligrams of sodium per day and it will get all it needs naturally from all those wonderful plants. Like protein, you will never have to worry about not getting enough salt. The average American is getting close to 4,000 milligrams and, along with the excess calories, too much fat and way too much animal protein — it’s a recipe for disaster.
