Sailors Super 4Leaf Lunch (or dinner)…the recipe version

Although now listed on Lisa’s Page; this was originally from my kitchen.

Early in 2011, I published a detailed description of my two favorite go-to meals in this blog. Those pages have been seen thousands of times and hopefully have been helping people achieve success on our 4Leaf Program. Over the weekend, I decided that it was time to develop a recipe version of those two meals. Scroll down for a printer-friendly version. Here’s the second one:

Sailors Super 4Leaf Lunch -- This version includes the 1/2 Josephs pita, stuffed with spinach, avocado and olives.

Sailors Super 4Leaf Lunch (or dinner)

No Cooking Skill Required. This is about as basic as it gets. No complicated recipes to follow; just a little planning ahead and you can be ready to have a piping hot, delicious lunch or dinner in less than seven minutes from going into the kitchen.

My Main Meal of the Day. Depending on your portion size, this great meal delivers about 600 calories; with well over 80% of them from whole plants – still in Nature’s package. It’s quick, easy and enables me to easily stay high in the 4Leaf range before going out to dinner each night.

Ingredients:

  • ½ cup of brown rice ½ cup of wild rice (serves 7)
  • ¾ cup of black beans (serves 7; see batch below)
  • ¾ cup of red beans (serves 7; see batch below)
  • 1 small broccoli crown
  • 3 ounces of shitake mushrooms
  • 1 slice of raw eggplant
  • 3 cups of raw spinach
  • 1 small slice of lime
  • Spray bottle of Braggs Liquid Aminos
  • ¼ of an avocado
  • 3 medium black olives
  • 1 small tomato
  • Basil seasoning or Mrs. Dash to taste
  • ½ of a Joseph’s whole wheat pita
  • I teaspoon of hummus
  • 10 baby carrots and bite-size celery

Directions (batch of rice and beans)

  1. With the quantities above, I make up a batch that yields seven individual servings.
  2. After mixing the brown and wild rice in advance, pour about a cup into rice cooker.
  3. Do the same for the two black and red beans and put in a saucepan. Cover the beans with plenty of water and let them overnight.
  4. Drain the beans, then refill with tap water to one inch above the beans. Put seasoning in there and stir it up.
  5. Simmer the beans for 75 minutes.
  6. Turn on the rice cooker; then both mixtures are ready to be eaten or stored in less than two hours.
  7. Put equal amounts of rice, covered by beans in seven small plastic containers. (from hummus).
  8. Store in fridge until ready to prepare meal. They last about 5 or 6 days.

Sailors Super Lunch -- without the Josephs pita. A very healthy 4Leaf meal, it derives almost 100% of its calories from whole plants. This was my lunch on Monday, adding edamame beans for the first time.

Directions (to prepare the meal)

  1. Put the raw spinach in bowl, squeeze lime juice and spray the Braggs on top; then microwave for about 30 seconds (to just blanch).
  2. Empty container of rice and beans on a plate; the rice will now be on top (a cylinder shape).
  3. Add bite-size pieces of broccoli, eggplant, celery and mushrooms to fill up the plate.
  4. Spray with Braggs and season as you wish. Put in microwave on high for two minutes.
  5. Put ½  Joseph’s pita on top for 15 seconds to warm it. (Optional, when I am less hungry, I go with the bread-less version in this photo.)
  6. Spread hummus on the warm ½ pita, then fill it halfway with blanched spinach. Add a few small slices of avocado and olives. Then fill the pita with the rest of the spinach.
  7. Add raw baby carrot, sliced tomatoes, and the remainder of the olives and avocado on top.

You’re ready to serve. This is my go-to meal for lunch or dinner and even most of my guests seem to like it a great deal. Most are probably surprised that an aging, single guy like me could make anything in the kitchen.

Top Ten Lists for Success with 4Leaf in 2012

Happy New Year! Let's do something great for our planet this year -- with every bite we put in our mouth.

Last night, we launched a 4Leaf Challenge for seventeen co-workers at an animal care clinic in Massachusetts. My son and I were there to lend support, provide tips and answer questions.

In preparation for that kick-off dinner at the clinic, I prepared two top ten lists for the group that has committed to eat 4Leaf for the next seven weeks. Here are those lists (see printer-friendly one-pager below):

Reasons (Motivators) for Doing This

  1. Promote your own vibrant health for the rest of your life.
  2. Give your children the gift of health.
  3. Ensure the health of of your grandchildren and all who follow them.
  4. Save $$ on your medical bills and avoid the old nursing home.
  5. Reduce your carbon footprint by 30 percent.
  6. Reduce your total water consumption by 90 percent.
  7. Help to end the needless suffering of billions of animals.
  8. Free up enough land to feed 15 of the world’s hungry.
  9. It’s your chance to be a key part of restoring harmony on our precious planet.
  10. (Almost forgot) Help your body seek its ideal weight — effortlessly.

Leveraging the simple concept of maximizing the percent of your calories that are derived from whole, plant-based foods

Tips That May Help

  1. Start your day with a bowl of fresh fruit.
  2. Eat a bowl of oatmeal (with more fruit) at mid-morning or when you get hungry.
  3. Make sure that all of your “routine” meals are in the 4Leaf range.
  4. Don’t “plan” to have ANY animal products in your diet.
  5. Simple 4Leaf meals with simple recipes are easy and tasty (See Sailors Super 4Leaf Lunch)
  6. When dining out, ask for the “side dishes” — without the oil, salt and cheese.
  7. Keep it simple; eat lots of raw fruit, carrots, celery, etc. for snacks.
  8. If you want to lose weight, go easy on the avocados, nuts, olives, etc.
  9. Prepare for the unexpected; maximize your score early in the day. (for some “wiggle room” later if needed)
  10. If you lose any motivation; re-read the above list of reasons.

WordPress hits a home run for my blog in 2011

Incredible Value — helping people like me make a difference in the world.

My experience with WordPress, my host. To put it clearly and succinctly; the experience has been “insanely great.” This time last year, I bought my first Apple computer (typing on it now) and, at the request of my publisher, launched this blog with that computer in February. So far, I have not spent a penny on this blog and have had zero tech support. Everything is so intuitive, I never needed any.

Zero Cost — Incredible Service. Many people new to blogging might opt for one of the many cheap web hosting services available today to host their site. However, as a blogger looking for a simple way to create fantastic blog entries and manage my website, especially at zero cost, WordPress receives my highest praise. I chose one of the standard WP templates, added my own colors and logos and published my first blog in February of 2011. Today is my 330th consecutive daily blog.

During those 330 days, I have continued to add pages, pictures, videos, comments from readers, and two online stores to my site. In addition, WordPress has provided extensive statistical information — on demand — every day of the year. Incredibly, the total cost for all of the above is zero. Then, just yesterday, the good people at WordPress surprised me with a sophisticated annual report on the history of my blog — and I am sharing that report with you today.

So what’s in it for WordPress? Advertising. That’s why occasionally you may see an advertisement at the end of one my posts. But since I have no control over the content of those messages, I have placed a discrete disclaimer at the bottom of each blog.
