From Mississippi to the T. Colin Campbell Center for Nutrition Studies

Last week was incredibly special for me. On Monday morning, I was invited to join the board of directors of Dr. Campbell’s foundation. Upon acceptance, Colin asked me to prepare a one-page summary of my background leading up to this appointment to his board. Here is that summary:

J. Morris (Jim) Hicks

After a career in business as a management consultant and senior corporate executive, Jim Hicks became curious about the “optimal diet” for humans in 2002. Having always been a “big picture” guy in business, he began a study of what we eat from a global perspective—discovering many startling issues and opportunities along the way. Leveraging his expertise in making complex things simple, he documented his findings in his powerful book, Healthy Eating, Healthy World, published by BenBella Books in October of 2011.

In his business career, he had lengthy stints as a management consultant (Kurt Salmon Associates and Conway Quality), serving such clients as Holiday Inns, Sears, and ITT. In 1981, he moved from consulting to line management and held senior executive positions with a number of fashion companies, such as Ralph Lauren in New York before launching his own executive search firm in Atlanta in 1999; The Ansley Consulting Group, a firm that is still active today.

Executive recruiter by day, Jim has spent his spare time learning all about food since 2002. After studying plant-based nutrition, reading hundreds of books and getting to know many of the top physicians in the field, he began to document his findings and conclusions on his Harmony Earth website in 2006. Then, after writing his book in 2010, he launched his blog site at HealthyEatingHealthyWorld.com in February of 2011. With a tagline of promoting health, hope and harmony on planet Earth, as of August 2012, he published his 564th consecutive daily blog on this topic.

To be sure, his interests in plant-based nutrition go far beyond human health; he is equally passionate about the impact of our rich Western diet on our environment, our supply of fossil fuels, world hunger and the widespread suffering of billions of factory-farm animals. He is now leveraging his business skills as he works to improve all of those facets of our world.

Throughout his career, he has always focused on improving processes—whether in the hospitality industry, consumer products or retail; always looking for the best bang for the buck in terms of improvement potential. In 2003, he discovered what he referred to as the single largest process improvement opportunity in the history of the world. The implications of shifting to a plant-based feeding model for humans are enormous—and J. Morris Hicks plans to spend the rest of his life improving that model. Now a speaker, blogger and consultant in this exciting field, here is a brief summary of the background that led to his new role—and the passion of his life.

  • MBA, Business Administration, 1971, The University of Hawaii
  • Officer, United States Coast Guard, 1969-1971 (Based in Honolulu)
  • Management Consultant and Corporate Executive (1971-1999)
  • Executive Recruiter (1999 to Present) Atlanta and New York
  • Certificate in Plant-Based Nutrition, 2009, T. Colin Campbell Foundation and eCornell (division of Cornell University).

In my letter of acceptance, I explained to Colin what this appointment means to me:

As you know, I am 100% in support of the center’s mission and have been for many years. I frequently tell people that it was your Plant-Based Nutrition course that was the catalyst that led me to write a book. Your instructors encouraged us in the classes to talk about how we would explain this powerful message to others—and, in so doing, I realized that I had a story to tell—a story that I hoped would resonate with the mainstream, non-vegetarian/vegans of the world.

Looking back to the early days of my learning in 2003, I can’t begin to tell you what an honor it is for me to be joining your board. Long before “The China Study” was published, I discovered your work on the Internet and remember thinking to myself that “this Dr. Campbell was the real deal, and that maybe someday I would be privileged enough to meet him.” Later, after your book came out and I first met you and Karen at the Zen Palate in NYC on December 6, 2005; I knew that I would always look to you as the “father of the science” that formed the platform of legitimacy on which all of those great pioneering physicians now operate. —J. From Lisa’s Kitchen — Smashing 4Leaf Rice and Lentil Burgers

Just say NO to store-bought veggie burgers; these are much better. 

Another masterpiece from Lisa's kitchen, where I ate Andrew's Kale Soup last night.

I started making my own burgers after reading the ingredients in the store bought veggie burgers. This version is adapted from “The Candle Cafe Cookbook. They are moist and delicious! You can also make it into a loaf with mashed potatoes.

 Ingredients:

  • 1 cup brown or green lentils
  • 2 cups cooked brown rice*
  • 4 garlic cloves, chopped
  • 1 red onion, chopped
  • 4 carrots, chopped
  • 3 red, orange or yellow peppers, seeded and diced
  • 2 teaspoons of sea salt
  • 1 teaspoon chili powder
  • 1/2 cup whole wheat panko bread crumbs (optional)
  • cooking spray

Directions:

  1. In a medium-sized saucepan, bring 2 1/2 cups of water to a boil. Add the lentils, reduce the heat to medium-low and cook until softened. Drain and place in large mixing bowl.
  2. Preheat the oven to 350 degrees F.
  3. In a sprayed pan (you may also use water), saute the garlic, carrots, onions and peppers until lightly browned.
  4. Add the vegetable mix to the lentils. Add the salt, chili powder and whole wheat panko crumbs (if using) and mix.
  5. Form patties and either cook in sprayed pan until browned or bake in the oven for about 15 minutes on each side, or until browned. If making loaf, press into sprayed loaf pan and cook until browned about 45 minutes.
  6. Enjoy!

* Freshly cooked brown rice works best as it holds the burger together, however, if you are using already made rice, simply heat it up.

5Leaf for lunch, 4Leaf for the road and 4Leaf with friends.

The “More Super” lunch or dinner. For the last few years, I have had a g0-to lunch and/or dinner that I dubbed my Sailors Super Lunch. The original version that is now posted on our 4Leaf Recipes page, this hearty meal featured one-half of a Joseph’s brand whole wheat pita, stuffed with spinach, olive and avocado.

The bread, along with the hummus, and all the other ingredients ended up with the percent of calories from whole plants at about 80%. Lately, when I am not too hungry, I started having this go-to favorite without the bread and hummus and end up with a near 100% score. For example…

On Monday and Tuesday this week, I made up the above variation of this meal. After placing my already cooked rice and bean mixture on the plate, I added a few mushrooms, broccoli, celery and edamame beans to the plate. Then I spray the entire plate with Bragg’s Liquid Amino and sprinkle with Basil leaves before warming in the microwave for a couple of minutes. I buy the edamame frozen at Whole Foods or Trader Joe’s and keep an un-frozen bag open and ready now at all times in the fridge. I then slice a little avocado and add some tomato and/or raw carrots on top.

Bragg and Basil --- all the seasoning I need

The only thing that is not a whole plant in this meal is the Bragg’s and the basil flakes. Therefore I consider it close to 100% whole plants—still in Nature’s package. With a bowl of fruit in the morning and this great meal for lunch, you’ll be giving yourself some “wiggle room” before going out to dinner—well on your way to a 4Leaf day.

4Leaf for the road. My favorite meal for a day on the water or on the train is my Joseph’s pita stuffed with whatever veggies I have in the fridge. To make sure I get plenty of calories while sailing or traveling, I usually cut the whole pita in half and use both halves.

I begin by warming the bread for about ten seconds in the microwave to soften it up. Then I put a little smear of hummus on each half pita. Next I fill it up with re-heated beans, rice, spinach, broccoli, or edamame. I usually add a little avocado and a few olives to the mix, wrap it in a plastic bag, and it’s ready to go. This simple handy meal-to-go has never failed me, and I love it every time.

The first 4Leaf Potluck Dinner Club. Jason and Lisa have formed a potluck dinner club and will host the first event later this month. Their goal is for people to get together and share their 4Leaf lifestyle, challenges, recipes, questions, etc. The idea is that they will decide on a location and the “host house” will provide the salad, utensils, plates, bowls, etc… The “guests” will each bring a 3 or 4 leaf dish to sample, including copies of the recipe to share. For the first dinner, they’re planning to have 2 entrees, 2 appetizers and a dessert.

And the dessert could just simply be vegan. They are promoting a 4Leaf lifestyle so there is room for dessert! They are thinking about meeting once a month on Saturday night? They also encourage their guests to bring two things:  cookbooks for people to share and BYOB! Maybe you can make this great idea work for you.
