Childhood Obesity — A “4-Leaf” school-teacher sounds off

At home, at school, at the soccer game, in the restaurants — the wrong food for our species is ubiquitous.

We know from overwhelming scientific and clinical evidence that the natural diet for our species is whole plants — in nature’s package. And even though our mothers told us that we should eat more fruits and vegetables, we keep eating less and less. As a percentage of our calories consumed in the United States, we get a meager 5% from whole plant foods — the natural diet for our species. Most Americans give far more thought to the type of fuel they put in their cars than they do the fuel they put in their bodies.

How can we not expect to have an obesity epidemic throughout our population at all ages — now beginning with the children? A school-teacher in Massachusetts (my daughter-law, Lisa Hicks) says it best in her comment responding to my Chubby Kids in Georgia post.

Food is definitely the main factor in childhood obesity. As a teacher, I see it everyday. The kids come into school, many of them after eating breakfast at home and eat it at school again, none of which is nutritional. They then are provided a snack, which consists of cereal, juice and cookies, again devoid of any nutritional value, and some of them even bring in their own snack to eat as well. Their snacks are always processed – cookies, chips, or candy.

In my twelve years of teaching, I have only seen a handful of kids bring in a piece of fruit! And then to lunch, which is served only about an hour after their snack. Lunch is usually pizza, macaroni and cheese or chicken nuggets, more processed unhealthy food. They are constantly being fed, and being fed the wrong foods!

Now to the lunchboxes, which are packed with snacks, something kids, and their parents, think they need. Unless it is a fruit or vegetable, all snacks are highly processed and full of ingredients that you can barely read! Putting things into your child’s body that you can’t even identify or know are bad for them is a shame. Hopfully, America realizes your message soon or we are going to have an even sicker, more obese generation of kids. Look at the variety of cookies and candy in a supermarket – how can we not think food is our problem?

Where does this mess end when you consider that our top schools of nutrition, like Cornell University, are still following the USDA pyramid (with animal foods) in their curriculum? Succumbing to pressure from the dairy industry, they even cancelled Dr. Campbell’s very popular Plant-Based Nutrition course a few years ago. (See my earlier post on Academic Freedom.)

Even though a former president of the United States (Bill Clinton) has read Dr. Campbell’s book and removed meat and dairy from his diet, our farmer-controlled USDA continues to promote meat and dairy for human consumption. But, as I have said many times before in this blog, the answer to this mess is a grass-roots revolution led by people like you and me.

The way to be an active part of this revolution (without proselytizing) is simply to choose the healthiest foods for you and your family  and share this kind of information with people that you care about. When enough of us are demanding more whole plant foods, the farmers, stores and restaurants will respond and this movement will eventually gain some powerful, world-changing momentum.

So what is a 4-Leaf school-teacher? Like most Americans, Lisa was eating at the “No-Leaf” level on our scale when she met my son. The diet-style made sense to her, she adopted it 100% overnight and went from a size 8 to a size 2 in the first six months — they are now happily married and living in Holden, MA.

For the record, Lisa and Jason have been eating at the 4-Leaf level for several years now; they both lost excess weight they didn’t know they had, they now enjoy vibrant health and they have started helping other people. Both Jason and I have begun doing some health coaching — making use of our 4-Leaf Program.

Clients on our program (that have a lot of weight to lose) have averaged losing 2-3 pounds per week until they hit their ideal weight. And after learning how to order or prepare 4-Leaf meals consistently (2-3 months), there is no need for any calorie counting for the rest of their lives. They just simply eat all they want — when they want.

Dr. Oz and his mixed signals…a reader speaks out

Occasionally I get a comment from a reader that simply says it all — and can stand alone as my complete blog for the day. Today is one of those days. After watching the Dr. Oz segment where he shamelessly promotes a dangerous “Atkins like” weight-loss diet — the Dukan Diet, Mitzi writes…

Severely dismayed now that I watched the second segment of Dr. Oz….

How could a medical doctor possibly approve people only eating vegetables every OTHER day in the main weight-loss phase of the diet? I can see how the exercise physiologist could fall for it, but Dr. Oz? Losing weight by any means necessary is almost never long term. My mother has done it again, and again, and again. She swore by the Atkins diet, and lost 100 pounds only to regain it, and then some. She had her gall bladder removed (50% filled with cholesterol-based stones, though her blood lipids were fine), and she still eats bacon every morning to “suppress appetite”.

One of the things that sent me on a quest for healthy living was not wanting to wind up spending life as many American women do, yo-yo-ing from diet to binge to diet and ruining a healthy metabolism in the process. The Dukan “diet” actually encourages that very behavior! Eat whatever you want for 6 days? Then only protein one day a week? How will that make up for anything? We have to change what we WANT to eat.

On a trip to Spain a few years ago, after two days, I was prowling the streets, looking for a good bowl of rice and beans (or a vegetarian paella, or something veg that wasn’t a sandwich or light salad). You change the cravings, and proper eating comes more and more easily. As long as you put garbage in – you get garbage out.

Although an endorsement from Dr. Oz would probably sell more books, I am not sure that I would want it. After all, I am not sure what he truly believes. Either he is totally confused himself or….he just needs the money.

Now if Oprah wants to endorse my book, I would be thrilled. She is not afraid to tell it like it is — even though she once got sued (along with Howard Lyman) by some Texas cattlemen for saying on her show, “I will never eat another burger!”

“Chubby Kids” in Georgia…on NBC’s Today Show

Yesterday morning (5-6-11), the Today Show aired a special segment about obese children in Georgia. With GA ranked #2 in the nation in childhood obesity (behind only Mississippi), one non-profit group (See website at end) has launched a somewhat controversial ad campaign aimed at reversing this deadly trend among our young. The controversy is regarding their use of obese youngsters in the ads along with phrases like “Chubby kids may not outlive their parents” shown here. Among many groups voicing objections to the ads is the National Association to Advance Fat Acceptance.

Like Michelle Obama’s program, the Biggest Loser and many others, the primary emphasis is all about getting the kids moving — and not nearly enough about the fact that we’re eating the wrong food. In a full 15 minute segment today, they mentioned diet once or twice for maybe two seconds but made no mention about what kind of eating regimen would be necessary to curb obesity in children — or in anyone for that matter.

Of course, they trotted out a few “experts” and psychologists and people that opposed the ads but never mentioned the real cause of our 300% increase in childhood obesity in the past 30 years. Without a doubt, it’s the toxic western diet with meat, dairy and highly processed carbohydrates with oil, sugar and salt — three meals a day — 365 days a year.

Now — like on Dr. Oz, here come the mixed signals — a half hour later on the same show

While scanning through the last few segments of yesterday’s Today Show, I had to chuckle when I saw David Gregory (standing in for Matt Lauer) — assisting Martha Stewart in the preparation of a special Mother’s Day dish. French Toast – the perfect food for making your whole family fat — including your kids.

The ingredients included six eggs, 1.5 cups of whole milk, a syrupy liqueur, oil, light bread (not whole grain), maple syrup, butter and sugar…with a few fruits and nuts on top for decoration. My guess is that the meal derived over 50% of its calories from fat and had way too much animal protein and cholesterol. This meal would have scored in the No-Leaf range for sure on our 4-Leaf Program…with less than 20% of its calories from whole plant foods.

Like Dr. Oz, they make a big deal about a “fight childhood obesity” segment and follow it up with a special “family holiday meal” for Mother’s Day — the exact kind of meal that promotes cancer, heart disease, diabetes, osteoporosis and stroke. These kinds of “mixed signals” are exactly what is keeping us sick and fat — but spending a ton of money on food and medical bills.

Our entire “system” of mainstream medicine, big food companies, academia, big pharma, the USDA, the FDA and the media is failing us. They are not making it clear what we should be eating to make us healthy. You see, when the aim is to make money — confusion works much better than clarity.

Huge problem to be sure — but it’s not going to be solved from the top down. It’s going to be solved by millions of people like you and me — learning the truth about nutrition, then making much better food choices for ourselves, for our families and for the planet.
